I would take up everything up to the last piece, it being the one you wanted to cut. Mark the piece where you want the carpet to start, the carefully remove it and cut it on the table saw. You'll need to install an end cap (can't remember the technical name for those things) over the end that will allow for expansion. The carpet will butt up to the end cap.
Of course, all of the above is figuring that you're cutting the board length-wise.
If you're cutting along the width of the board, I would probably mask it off with several rows of masking tape to protect the floor that you're keeping, and to keep it from chipping, then cut it with a circular saw set to the proper depth. There may be a better way of cutting it along the width that someone else can chime in about, that's the only way I would know of doing it. You'll still need the end cap either way.
